Homemade fresh coconut milk

Blindingly simple but possibly something you never really thought to do, I know I didn’t! 

I would see the ladies in the markets of Indonesia grate the coconuts by hand to make coconut milk, and then use for their stews.

You will need:

A grater or high speed blender
A fine mesh seive
A coconut (or several depending on how much milk you want)
If you really cannot get hold of a coconut then you could use unsweetened desiccated coconut.

To do:

All you need to do is grate the white of the coconut

Mix the grated coconut with a cup of water and sieve into a separate bowl squeezing the pulp with your  hands, do this three times or if you have a high speed blender – blend with 1 pint of water.

You can add sweeter or vanilla to taste.

How simple is that? No additives, no preservatives and less than three ingredients!
