Another of the recipes from my Indonesian cooking class
Suitable for vegetarians and vegans…
Ingredients:
Fresh coconut milk (see how to make yourself here)
Garlic
Shallot
Carrot
Aubergine (eggplant)
Green beans
Chayote
Crispy onions
Cut the beans into 1 -2 inch pieces, slice the carrot and cut the aubergine and chayote into small chunks.
Crush the garlic and chop the shallots finely.
Fry the garlic and shallots, add the fresh coconut milk, add the chopped vegetables to simmer until cooked and soft.
Garnish with a pinch of the Indonesian favourite of fried crispy onions.
Serve alone with rice or as a side dish.
