Another tasty and easy salad recipe from Bali…
Salad:
Chopped romaine lettuce
Shredded carrots
Bean mix (I would personally opt for kidney and black bean for extra protein)
Chopped tomatoes
Diced onions
Chopped yellow, green and red peppers
Dressing:
Squeeze of lime juice
Glug of good quality olive oil
Salt and pepper
First whiskey these together with a fork, then add to salad and toss ingredients for even coating.
Top with
Grated cheddar, crumbled feta or cubed vegan cheese
Smashed plain or salted tortilla chips
Serve with a side of brown rice of quinoa
(coconut milk coffee optional)
