Fresh Gado Gado recipe

An Indonesian dish that I learned from a cooking class in Yogyakarta…

Suitable for vegetarians and vegans

For the Peanut / Satay sauce:
Roasted peanuts
Garlic
Shallots
Chilli to taste

Roast the peanuts in the oven or fry over high heat in a wok with a little oil.

With a pestle and mortar crush the garlic and shallots into a paste then add the roasted peanuts and crush/grind these with the paste until smooth, add chilli to taste.

Alternatively, you can add these ingredients to a high-speed blender and blend until smooth.

For the rest:

Chop runner beans into 1 – 2 inch chunks
Add finely diced cucumber
Chopped fresh tomatoes
Bean sprouts

Mix these ingredients with the sauce and then serve.

(We served with rice, tempeh, boiled egg, prawn crackers and a coconut & vegetable stew).
